Laundry On Sundaes

Every beginning is only a sequel, after all, and the book of events is always open halfway through.

I tried making these healthy cookies this week and they turned out pretty good! So I wanted to share this super simple recipe with you guys. It’s adapted from this recipe from Cassey from Blogilates, but I added a couple more ingredients and changed it a little. The texture is a little different from regular cookies; to me it’s kind of like a chewy energy bar. They make great snacks, dessert, or even breakfast! Ok here’s the recipe!

Makes about 12 small cookies

Ingredients:
– 2 ripe bananas
– 2 cups rolled oats
– 1/4 cup sliced almonds
– 1/4 cup chocolate chips

Directions:
1. Put 1.5 cups of the oats into a food processor or blender and grind into oat flour.
2. Pour oat flour and the remaining oats into a bowl. Add the bananas and mash with your hands or a fork until it forms a dough.
3. Add the almonds and chocolate chips and mix until even.
4. Shape into cookies on a baking tray.
5. Bake 15 minutes at 350 degrees F.

And that’s it! It’s really easy to make and it tastes yummy AND it’s healthy. It’s flourless and has no butter and no added sugar (well beside the chocolate chips, but a little chocolate never killed anybody). You can also change this recipe is many different ways, like adding different ingredients or changing the amount to your liking. You can also grind all of the oats into oat flour, but I decided to keep some since I really like the oat texture. Oh and they dough is REALLY sticky because of the banana so if you don’t want to get your hands dirty, don’t use your hands to mash the dough or shape the cookies.
